Have you ever made a yogurt parfait? If you haven’t, why not try making one for your next breakfast. They’re super easy to make at home. You can tailor it to your own tastes. And you can make in the night before for a quick breakfast the next morning. Take your favorite fruits, add some yogurt, maybe a little granola, and you’re set. But to get the most nutritional value, be sure to look at the type of ingredients you use.

Fruit

Take fruit for example, your choices being fresh, frozen, or canned. All three offer benefits, because just getting more fruit in your diet is a plus. And adding more fruit, like the fresh blueberries and mango in this recipe, usually brings with it more fiber, nutrients, and antioxidants. Still, you should read the labels when buying frozen or canned fruit and choose those without all the extra sugar.

Yogurt

When considering yogurt, there’s a big difference in the types of yogurt you find in the store. This includes regular yogurt, Greek yogurt, Icelandic yogurt, full-fat or low-fat or non-fat yogurt – you get the idea. Any one of these would be a good choice. But my general guideline is to go with one that is higher in protein and lower in added sugar. Greek yogurt and Icelandic yogurt are both higher in protein than regular yogurt.

As with the fruit, read the label and choose one that is lower in added sugars. When I make a yogurt parfait, I choose a non-fat, plain Greek yogurt with no added sugar. That way I can sweeten it to my own taste and avoid the unneeded extra sugar often found in flavored yogurts. For this yogurt parfait I used honey. For my Triple Berry Greek Yogurt Parfait I chose to use blue agave syrup. It’s really a personal preference. Use whatever sweetener you feel comfortable with – or none at all.

If you choose to add granola, either make your own or select one that’s lower in sugar and other additives. For today’s Blueberry Mango Yogurt Parfait, I opted to leave the granola out. This yogurt parfait is delicious as is. Blueberries and mango always complement each other well and provide a healthy dose of fiber, vitamin C, vitamin A, and nutrients. FAGE Plain Greek Yogurt is one of my favorites to use in a parfait like this. It’s creamy and has a good flavor. I just add a little honey and mix in a bit of fresh lemon juice for a sweet, but tangy, delicious flavor that goes well with the blueberries and mango. It’s delicious for breakfast or easy afternoon snack.

Blueberry Mango Yogurt Parfait

Ingredients

  • 1 c. plain Greek yogurt
  • 2 tsp. fresh lemon juice
  • 2 tsp. honey or less if desired
  • 1 Ataulfo mango diced (about 2/3 cup)
  • 2/3 c. fresh blueberries
  • Fresh lemon zest for garnish if desired

Instructions

  • In a small bowl mix together the Greek yogurt, lemon juice, and honey.
  • To serve, spoon about a tablespoon in the bottom of a glass or bowl. Add a layer of blueberries and then a layer of diced mango.
  • Repeat layers until the glass is full, ending with mango on top and garnished with fresh lemon zest.
  • Serve immediately or refrigerate till ready to eat.
