Most of my neighbors are in a different season of life than I am right now. They have babies, or they are expecting babies. Some of them have younger school-age children. And me, I am in the older crowd. I have a twenty-something, a couple teens, and a pre-teen. It’s a busy season, but a fun one too.

My youngest daughter is teaching herself how to juggle this summer. She started off with three juggling balls we had laying around from some old unused kit we bought years ago because one of the kids thought they’d like to learn how to juggle, but never really got into it. She practiced and watched tutorials on how to juggle. After that, she made her own juggling balls of different colors using balloons and flour. That’s it. Two ingredients and you have a juggling ball – or a stress ball if you need it.

She has mastered three balls and now calls me outside to watch her juggle four balls and do tricks with three balls. Tonight, she asked me to watch her juggle three basketballs. Three basketballs? I had to see this. And she did. She juggled three basketballs, each about two inches in diameter. She definitely had me fooled and we both had a good laugh.

Her next project is to make juggling sticks and then learn how to juggle them. That would be cool. I’m not sure how far she will go with this new hobby, but it’s fun to see her try something new and to see the smile on her face when she succeeds. I love this part of parenting.

So what does this have to do with Peaches & Cream Popsicles? Not much, except that they make a nice treat after being outside in the hot sun when you are practicing your juggling – or any time you want a cool and creamy treat that happens to be healthy too. The sweet, juicy peaches are low in calories and are a good source of fiber, vitamin A and vitamin C. Creamy Greek yogurt provides protein and calcium. The amount of sweetener is up to you. Taste the peaches first to see how naturally sweet they are, then add your sweetener little by little, tasting the mix after each addition untill you are satisfied with the taste.

These Peaches & Cream Popsicles are easy to make. They have only four ingredients: fresh peaches, Greek yogurt, sweetener of choice, and vanilla bean paste. If you do not have vanilla bean paste you can substitute vanilla extract. Blend them all together, pour into popsicle molds, and freeze.

Ingredients

  • 1 c. Greek yogurt plain
  • 2 large peaches cut into large chunks
  • 1 tsp. vanilla bean paste or extract
  • 1 – 3 Tbsp. sugar or other sweetener

Instructions

  • Place Greek yogurt, peaches, and vanilla bean paste into a blender. Blend until smooth.
  • Taste the peach/yogurt mixture and add 1 Tbsp. of sweetener. Blend together and taste again. Add more sweetener if desired and blend together again.
  • Pour mixture into popsicle molds and freeze until firm.
  • Makes about 3 c. of the mixture.
