One of the challenges of having kids around all day – we homeschool – is coming up with a variety of healthy, but easy to make lunches that they all enjoy. With four kids we’re pretty busy with school work in the morning, and before I know it everyone is hungry and clamoring to the kitchen to see what’s for lunch. Sure, there are days when I open the fridge and bring out all the makings for a quick sandwich before we leave for afternoon activities. But other days we’re all in the mood for a warm meal. These pizza rounds are one of our favorites. They’re easy, fairly quick, and a healthy option.

For the crust, use your favorite whole grain sandwich thin. Look for whole grain or 100% whole wheat for the healthiest choice.

Use one thin (top and bottom) for each person. Drizzle a small amount of olive oil on each half and spread evenly on the round.

Top with 1 Tbsp. of your favorite tomato sauce or low-fat prepared spaghetti sauce. I like to use my own homemade roasted tomato sauce that I make in the fall with tomatoes and herbs from our garden.

Look in your fridge and see what vegetables you have that might make a good topping. For this pizza round I chose to use baby spinach, thinly sliced red peppers, and tomatoes. Other healthy ideas might be mushrooms, fresh basil, or thin sliced zucchini. Even fruit can be a good choice. Pineapple or mandarin oranges make a tasty addition to any combination of vegetables.

Top with a low-fat Mozzarella cheese and a sprinkle of shredded Parmesan cheese. Bake at 400°F for 6-8 minutes until done. Serve with fresh fruit and glass of skim milk for a healthy, kid-friendly lunch. Enjoy!

Ingredients

  • 1 Thin whole-grain sandwich round
  • 2 Tbsp. spaghetti sauce
  • 1 tsp. olive oil
  • 2 slices tomato
  • 4 thin slices of red pepper
  • 10 leaves baby spinach
  • 1/4 c. shredded low-fat Mozzarella cheese
  • 2 tsp. shredded Parmesan cheese

Instructions

  • Separate sandwich thin.
  • Drizzle olive oil on insides of the round. Spread evenly.
  • Top each half with 1 Tbsp. of spaghetti sauce.
  • Add your favorite toppings.
  • Finish with 2 Tbsp. shredded Mozzarella cheese and 1 tsp. shredded Parmesan cheese on each round.
  • Bake at 400°F for 6-8 minutes or until done.
  • Enjoy!
