
Quiz time: What summer vegetable is actually a fruit and can grow anywhere from a few inches long to as large as even a baseball bat? The answer: Zucchini! It’s a healthy, easy to grow summer squash that’s as versatile in cooking as it is prolific.
You can eat it raw, bake, grill or roast it, slice it, dice it, spiralize it, or shave it into ribbons. The choices are numerous. So I asked some of my dietitian friends for creative ideas on how they use zucchini. Here’s a collection of 41 of their best healthy ideas and recipes using zucchini. You’ll find anything from zucchini bread to quiche to oatmeal to salads – and lots more in between. There’s something for all tastes, including vegan and gluten-free! Here they are:
