
Fresh fruit is healthy addition to any meal or snack. Pick any array of fruit and you’ll find good sources of vitamin C, fiber, beta-carotene, potassium, or anti-oxidants. Including fruit in your diet is definitely a healthy choice.

Fruit kebabs are a great way to prepare a variety of fresh fruit for special occasions, to have with the evening meal, or with a snack. When I made these fruit kebabs my kids came running for them as soon as I was done making them. They loved them.
There are so many ways you can use these. And they’re easy to make too. My first thought was to offer them as part of an Easter buffet – since Easter is coming up soon. But you could send them in your kids’ lunch boxes as a fun, but healthy, dessert at school. Or save some and have them for a refreshing afternoon snack with an ounce of cheese cubes or a small dish of cottage cheese. There are lots of possibilities. You could use different sizes of skewers, or even toothpicks, depending on how you want to serve them.

The vinaigrette is tangy and slightly sweet, with just a little bit of bite from the ginger. I found it a nice touch without overpowering the flavors of the fruit. And if you choose fruit that turns brown when exposed to the air, like bananas, it will keep them looking nice and prevent that browning.

Fruit Kebabs with Honey-Lime-Ginger Vinaigrette
Serves 6
Ingredients:
Fresh fruit: Pineapple, Canteloupe, Bananas, Grapes (red and/or green), Strawberries, Blueberries, Blackberries
Vinaigrette:
6 Tbsp. Lime juice
2 Tbsp. Apple cider vinegar
4 1/2 Tbsp. Honey
1/2 to 1 tsp. grated fresh ginger
Kebabs: Wooden skewers (size of choice)
Instructions:
Mix together lime juice, apple cider vinegar, and honey. Add ginger and mix together with a small wire whip till blended. Set aside.
Clean and prepare fruit, cutting it into chunks large enough to slide onto the wooden skewers. For fruit that browns easily – cut last and in small batches as you need it.

Build fruit kebabs by sliding cut fruit onto wooden skewers or toothpicks. Place kebabs in a pan with sides, such as a cake pan or jelly roll pan.
After kebabs are built, spoon vinaigrette over the fruit, making sure to spoon it over any fruit that browns easily.

Serve immediately or cover pan with plastic wrap and refrigerate overnight. Serve on top of blackberries and blueberries. Enjoy!
