Ingredients

  • 1 9 inch cucumber
  • 1/4 c. Roasted Red Pepper Hummus
  • 1/4 c. Fresh cilantro
  • 12 Grape tomatoes
  • 1/2 tsp. Toasted sesame seed**

Instructions

  • Peel cucumber, leaving strips of peeling on the long side of the cucumber if desired. Slice into 24 equally sized slices. Place slices on a serving tray
  • Spoon hummus into a plastic zipper bag and zip it closed. Snip off a corner of the bag and pipe the hummus evenly onto the cucumber slices.
  • Arrange cilantro leaves on the hummus or sprinkle with chopped cilantro.
  • Cut grape tomatoes in half lengthwise or diagonally, if preferred. Top each cucumber slice with a grape tomato half.
  • Sprinkle **toasted sesame seed evenly over the cucumber bites. Serve immediately or refrigerate until time for serving. Best if used within 24 hours.
    Makes 24 slices. Nutrition values based on 3 slices per serving.

Notes

**To toast sesame seeds, place seeds in a small skillet and toast over medium heat till golden and fragrant. Watch carefully and remove immediately as sesame seeds can easily burn.
