- 1 9 inch cucumber
- 1/4 c. Roasted Red Pepper Hummus
- 1/4 c. Fresh cilantro
- 12 Grape tomatoes
- 1/2 tsp. Toasted sesame seed**
Peel cucumber, leaving strips of peeling on the long side of the cucumber if desired. Slice into 24 equally sized slices. Place slices on a serving tray
Spoon hummus into a plastic zipper bag and zip it closed. Snip off a corner of the bag and pipe the hummus evenly onto the cucumber slices.
Arrange cilantro leaves on the hummus or sprinkle with chopped cilantro.
Cut grape tomatoes in half lengthwise or diagonally, if preferred. Top each cucumber slice with a grape tomato half.
Sprinkle **toasted sesame seed evenly over the cucumber bites. Serve immediately or refrigerate until time for serving. Best if used within 24 hours.Makes 24 slices. Nutrition values based on 3 slices per serving.
**To toast sesame seeds, place seeds in a small skillet and toast over medium heat till golden and fragrant. Watch carefully and remove immediately as sesame seeds can easily burn.
