Roast Beef, Fig and Blue Cheese Crostini

Ingredients

  • 12 slices crostini
  • 1/4 c. ricotta cheese
  • 4 oz. thin sliced roast beef I used London Broil from the deli counter
  • 10-12 dried figs sliced length-wise (4 to 5 slices per fig)
  • 1/4 c. crumbled Blue cheese about 1 ΒΌ oz.

Instructions

  • On each crostini spread about 1 tsp. of ricotta cheese. Arrange fig slices on the ricotta cheese and top with about 1/3 oz. roast beef. Sprinkle each crostini with about 1 tsp. of the crumbled Blue cheese.
  • Serve immediately.
