Peanut Butter Cookie Dough Energy Bites - Taste like peanut butter cookie dough but have more to offer nutritionally than traditional cookie dough. They’re great for a quick snack or treat in the afternoon, or a pre- or post-workout fuel for your body.

Ingredients

  • 2 cups old-fashioned oats
  • 1/2 cup finely ground almonds
  • 4 Tbsp. peanut butter powder
  • 1 cup creamy peanut butter
  • 1/2 cup chopped pitted dates
  • 1 1/2 tsp. vanilla extract
  • 6 Tbsp. honey

Instructions

  • Place all ingredients into a large food processor.
  • Process until all ingredients are combined and mixture is like fine crumbs (like graham cracker crumbs).
  • Roll into 1-inch balls. You may need to squeeze the crumbs together and then roll if it seems too dry. Place on rimmed cookie sheet, and chill till ready to serve.
