Cherry Vanilla Overnight Oats
Steel cut oats and dried cherries make a delicious, nourishing start to the day. Start it the night before and enjoy in the morning.

- 1 c. steel cut oats
- 1 tsp. cinnamon
- 3 c. water
- 1 1/3 c. skim milk
- 1 Tbsp. brown sugar
- 1 Pinch salt
- 1/2 c. dried cherries
- 1 1/2 tsp. vanilla
Spray the inside of the crock pot with non-stick pan spray.
Add oats, cinnamon, water, milk, brown sugar, and salt. Stir lightly to combine.
Cover with lid and turn crock pot on low for 6-8 hours.
About 1/2 hour before serving stir in dried cherries and vanilla. (I do this first thing when I wake up and then get ready for my day. The oats are then ready when I get back to the kitchen)
Serve and top with your favorite add-ons. (Toasted slivered almonds go very well with this recipe)
