Cherry Vanilla Overnight Oats

Steel cut oats and dried cherries make a delicious, nourishing start to the day. Start it the night before and enjoy in the morning.

Ingredients

  • 1 c. steel cut oats
  • 1 tsp. cinnamon
  • 3 c. water
  • 1 1/3 c. skim milk
  • 1 Tbsp. brown sugar
  • 1 Pinch salt
  • 1/2 c. dried cherries
  • 1 1/2 tsp. vanilla

Instructions

  • Spray the inside of the crock pot with non-stick pan spray.
  • Add oats, cinnamon, water, milk, brown sugar, and salt. Stir lightly to combine.
  • Cover with lid and turn crock pot on low for 6-8 hours.
  • About 1/2 hour before serving stir in dried cherries and vanilla. (I do this first thing when I wake up and then get ready for my day. The oats are then ready when I get back to the kitchen)
  • Serve and top with your favorite add-ons. (Toasted slivered almonds go very well with this recipe)
