Apple Nachos

Apple slices are topped with a fun mix of flavors - Greek yogurt, peanut butter, and dark chocolate - for a healthy, delicious snack.

Ingredients

  • 1/3 to 1/2 c. plain Greek yogurt
  • 2 Tbsp. Chia seeds
  • 1 tsp. honey
  • 1/4 tsp. vanilla bean paste or extract
  • 2 apples
  • 3 Tbsp. peanut butter
  • dark chocolate for garnish

Instructions

  • Place the yogurt, chia seeds, honey, and vanilla in a small, sealable sandwich bag. Seal the bag, removing as much air as you can. Squeeze and mash the ingredients around with your fingers until combined. Refrigerate for 30 to 60 minutes or until chia seeds are softened and gel-like.
  • When yogurt is ready, slice apples into a bowl filled with water and lemon juice to prevent browning. Drain apples in a colander and arrange onto a large plate. Snip off a small corner of the yogurt-filled sandwich bag and swirl the contents over the apples. (Add a little more yogurt if it seems too thick).
  • Melt the peanut butter in a microwave-safe liquid measuring cup for 30 seconds at a time until melted. Drizzle over the apples and yogurt. Using a small grater, shave some dark chocolate over the nachos. Serve and enjoy!
