Ingredients

  • 1 English cucumber
  • 1/2 c. Roasted Red Pepper Hummus
  • 1/4 c. Fresh cilantro
  • 12 Grape tomatoes sliced cross-wise into 3 or 4 slices each
  • 1/2 tsp. Toasted sesame seed

Instructions

  • Peel cucumber, leaving strips of peeling on the long side of the cucumber if desired. Slice into 1/4-inch slices.
  • Spread 1/2 tsp. of hummus on each cucumber slice.
  • Arrange cilantro leaves on the hummus or sprinkle with chopped cilantro.
  • Top each slice with a slice of grape tomato and garnish with a pinch of sesame seed.
  • Serve immediately.
