Chicken Snow Pea Skillet

Easy, garlicky stir-fry of chicken and snow peas is quick, nourishing and delicious. Serve with rice or potatoes.

  • 1 pound boneless chicken breast or tenderloins cut into 1-inch pieces
  • 1 Tbsp. all-purpose flour
  • Salt to taste
  • Ground black pepper to taste
  • 2 Tbsp. extra-virgin olive oil
  • 2 garlic cloves minced
  • 1 1/2 c. snow peas cut into 1-inch pieces
  • 1/2 c. finely diced carrots


  • In a medium mixing bowl, toss together the chicken, flour, and a sprinkle of salt and pepper until the chicken is thoroughly coated.
  • In a large skillet over medium heat, heat the olive oil. Add the chicken and cook until it is opaque on all sides, 3 to 4 minutes total.
  • Add the garlic to the skillet, and stir to combine. Cook for 1 minute, or until fragrant. Add the snow peas and carrots. Stir well. Cover and cook for 10 minutes more, stirring once.
  • Uncover and stir. Taste, season with salt and pepper, and serve.
