Blueberry Mango Yogurt Parfait
For a healthy, quick and easy breakfast option, try a Blueberry Mango Yogurt Parfait! Make the night before or in the morning for a delicious start to your day.
Servings: 2 servings
- 1 c. plain Greek yogurt
- 2 tsp. fresh lemon juice
- 2 tsp. honey or less if desired
- 1 Ataulfo mango diced (about 2/3 cup)
- 2/3 c. fresh blueberries
- Fresh lemon zest for garnish if desired
In a small bowl mix together the Greek yogurt, lemon juice, and honey.
To serve, spoon about a tablespoon in the bottom of a glass or bowl. Add a layer of blueberries and then a layer of diced mango.
Repeat layers until the glass is full, ending with mango on top and garnished with fresh lemon zest.
Serve immediately or refrigerate till ready to eat.
