  • 1 c. plain Greek yogurt
  • 2 tsp. fresh lemon juice
  • 2 tsp. honey or less if desired
  • 1 Ataulfo mango diced (about 2/3 cup)
  • 2/3 c. fresh blueberries
  • Fresh lemon zest for garnish if desired


  • In a small bowl mix together the Greek yogurt, lemon juice, and honey.
  • To serve, spoon about a tablespoon in the bottom of a glass or bowl. Add a layer of blueberries and then a layer of diced mango.
  • Repeat layers until the glass is full, ending with mango on top and garnished with fresh lemon zest.
  • Serve immediately or refrigerate till ready to eat.
