After being gone a week for my kids’ basketball tournament, and no dinner menu, I’m back! This week’s menu starts with an easy veggie frittata, followed by a couple of delicious looking Italian dishes. The week finishes up with a pork roast and a stir-fry. I tried to include lots of vegetables and variety this week, especially since that tends to be on the short side when we travel. - Wednesday: Italian Skillet Chicken with Tomatoes and Mushrooms (from The Mediterranean Dish), rice pilaf
- Thursday: Herb Rubbed Pork Sirloin Roast, roasted carrots and potatoes, Homemade Chunky Applesauce
- Friday: Leftovers
