My kids love it when we make smoothies for breakfast. This time we had strawberries and mangos around so that was the flavor of choice. And they turned out very yummy and healthy.
Strawberries are a good source of fiber, vitamin C, and folate. Mangos are another nutrition powerhouse. This sweet tasting fruit is an excellent source of vitamins C and A, a good source of fiber, and low in calories. Pair these two fruits together in a smoothie and you have a great tasting, very healthy breakfast option – or snack option later in the day.
.The mangos I used for these smoothies were Ataulfo mangos. They are smaller than those you usually find in the store. But I like them better. They’re easier to cut and the pit is small as well. The taste is wonderful. They’re really not that hard to cut, unless you try to peel them first and then cut the fruit off the pit. That doesn’t work very well at all. This video from the National Mango Board shows how to easily cut a mango, whether you’re dicing it or want slices.
So now, for the recipe:
Strawberry-Mango Smoothies
Servings: 5-6
Ingredients:
1 lb. fresh strawberries, washed and stems removed
2 small mangos
1/4 c. skim milk
1 c. non-fat, plain Greek yogurt
2 Tbsp. honey
20 ice cubes
Instructions:
Cut strawberries in half and place in blender. Cut and dice mangos and add to strawberries.
Pour in skim milk. Add yogurt and honey. Blend all ingredients together till smooth.
Add ice cubes, 10 at a time, and blend until desired consistency. Serve and enjoy!
Makes about 6 cups.
