In these hot summer months smoothies seem to be all the rage. It’s understandable. Smoothies can taste great, are visually appealing, and offer a cool creaminess that soothes and satisfies on hot days. And if you make them at home, they have the added benefit of being a healthy choice.
I’ve posted three different recipes for smoothies over the last several months. The first was a strawberry-banana smoothie. The second a strawberry-mango smoothie (there’s a strawberry theme going on here). And the third was a blueberry-banana smoothie. I’m still not sure which is my favorite. They are all good; and all have healthy ingredients like plain Greek yogurt, a small amount of honey, and a variety of fruit.
There’s more than one way to consume a smoothie though. My family and I love them right out of the blender and usually I have no leftovers. But the last time I made blueberry-banana smoothies I was the only one home – which doesn’t happen very often. So what to do? I couldn’t drink a blender-full of the stuff. No matter how healthy it is, too much is not good.
I decided to use some popsicle molds I picked up recently at a local thrift store. I filled the molds half way with the smoothie mix, added a few fresh blueberries in the middle – though I think you could use frozen – then filled the molds the rest of the way with the remaining smoothie mix.
Next I placed the tops of the molds and popped them into the freezer. A few hours later we had blueberry-banana smoothie popsicles.
When the kids came home we had a taste test and they loved them. Cool, creamy smoothies in a popsicle. And what kid doesn’t like a popsicle?
I haven’t tried it with the other two recipes, but I’d like to. I think they’d turn out just as good. So if you’re kids like popsicles, don’t buy the kind loaded with excess sugar and food coloring. Take a smoothie recipe and make your own. You won’t be sorry.
