It’s time for a change in your normal coleslaw routine – a change in flavors when you make this Easy Cilantro Lime Coleslaw. Look in any older cookbook and you’ll find recipes for creamy coleslaw or slaws with a basic oil and vinegar dressing. Go a little further and you’ll find recipes for Amish coleslaw.

While those recipes are delicious, coleslaw can take on a lot more personality by switching up the dressing you use. Shredded cabbage, the main ingredient in coleslaw, has a light, peppery taste that pairs well with bolder flavors like cilantro and lime . . . or even a little cayenne pepper. It’s a flavor combination that’s good-tasting all by itself or even as a topping for fish tacos or barbeque sandwiches.

How is it easy to make?

Usually, when I make coleslaw, I shred a head of cabbage, and add thinly sliced onions and shredded carrots. And I often use a vinaigrette that calls for cooking the dressing and then letting it cool before adding to the cabbage and carrot mix. It’s easy, but it takes time. So, when I want something quicker, I turn to this recipe for Easy Cilantro Lime Coleslaw. It’s delicious, simple and easy to make with just a few ingredients.

First off, except for the cilantro, there’s no shredding, slicing, or chopping involved. For the salad mix, I use pre-shredded coleslaw mix. You can find it at almost any grocery store in the produce area. Just open it up into a bowl and top it with your favorite dressing or vinaigrette. It’s that easy, and perfect for busy weeknight meals. . . or anytime for that matter.

The vinaigrette is simple to make and uses fresh limes, olive oil, and honey. Super easy. And if you don’t have fresh limes, simply use bottled lime juice.

What makes it a healthy choice?

While Cilantro Lime Coleslaw is packed with fresh flavor, it also ranks high nutritionally. Cabbage is in the cruciferous family, related to broccoli and cauliflower, and is filled with all kinds of nutrients. In fact, one cup of raw, shredded cabbage provides a hefty amount of Vitamin C, an important antioxidant and vitamin that’s involved in many body functions. It’s also a good source of fiber and an excellent source of Vitamin K. What’s more, it provides all this in less than 20 calories.

In addition to all that, cilantro and lime juice provide their own nutritional punch. Cilantro is a good source of antioxidants, folate, iron, and vitamins A, C, and K. And lime juice provides a good amount of Vitamin C as well as other nutrients.

Ingredients

  • Juice of 2 limes (about 1/3 cup)
  • 1/3 cup Extra virgin olive oil
  • 2 Tbsp. Honey
  • 1/8 tsp. salt
  • Pinch Cayene pepper (if desired)
  • 1/2 cup Chopped, fresh cilantro
  • 1 14 oz. bag Fresh coleslaw mix (about 7 cups) usually contains fresh shredded cabbage and carrots

Instructions

  • For the dressing, in a 1 cup liquid measuring cup, whisk together the lime juice, olive oil, honey, salt, and cayene pepper until smooth and well mixed.
  • In a large bowl, toss together the coleslaw mix and choppd cilantro. Pour the dressing over the coleslaw-cilantro mix and mix well. Serve immediately or refrigerate until ready to serve. Goes very well with fish tacos.
