I have prepared and eaten many different types of egg dishes, but until recently I had never tried baked eggs. I don’t know what took me so long to try them. They are so good and there is nothing much simpler than a baked egg. Season them however you like, baked eggs are easy to prepare and serve for just about any meal. On top of that, eggs can be a healthy addition to your diet. They are a rich source of high quality, complete protein, and a good source of choline.
For this recipe, I used a six cup silicon muffin pan. This made it easy to remove the eggs from the pan by inverting the muffin cup. You can still make these in a metal muffin tin. Just carefully lift the baked eggs from the muffin tin with a spatula. For variation smear pesto along the side of the muffin cups before adding the eggs. Top with a little parmesan and bake as directed. You can eat these right out of the oven all by themselves, or put them in an English muffin with a little low-fat mozzarella cheese and spinach for a breakfast muffin. Refrigerate the leftovers and have them for breakfast the next morning.

Hi Marie,
I just wanted to let you know I finally made the baked eggs. I decided to do them in ramekins and first put in tomatoes, basil, spinach, cheese, roasted garlic, a tiny bit of prosciutto and then the egg. Next time I might add sautéed mushrooms and onions, too, lol. It was all just TOO DELICIOUS!! Thanks for motivating me to try this finally! I had planned on doing a post on it but my pics didn’t turn out very well. Eggs are hard to shoot! lol. Thanks again 🙂
