My go-to side dish at dinner is often a simple green salad tossed with whatever fresh vegetables I can find in my fridge. Add a little fruit, feta cheese, and a few seeds or nuts and you have a nourishing salad on your plate. But do this every meal and your salads can get boring. One way to change it up is to dress it with a new vinaigrette. And if you’re like me, you don’t want a lot of salad dressing bottles taking up space in your fridge. That’s where homemade vinaigrettes come in. They’re easy to make; and you can tailor them to  your taste preferences, and whatever produce you have available. Since I had kiwi fruit in my kitchen just waiting to be used, I decided to make a fresh kiwi vinaigrette. And oh my, it’s now one of my favorites. It takes only six ingredients and is super easy to make. In addition, kiwi is filled with vitamin C, vitamin K, and fiber – all nutrients your body needs. The bonus here is that this recipe requires no added sugar in any form. No white sugar, no honey, no maple syrup. Kiwi is plenty sweet on its own. It makes a sweet, tangy vinaigrette perfect for topping your next salad. You could even use kiwi vinaigrette as a tasty marinade for chicken or fish.

You’ll need to use an immersion blender or other small blender to blend the ingredients together. I have a Cusinart hand blender that I love using for vinaigrettes as well as other dishes. Ingredients

  • 1 Kiwi peeled and quartered
  • 3 Tbsp. lemongrass mint white balsamic vinegar or plain white balsamic vinegar
  • 1/4 to 1/2 tsp. Dijon mustard
  • 1/2 Tbsp. thin sliced shallot or red onion
  • 1/4 tsp. pepper
  • 1/4 c. olive oil

Instructions

  • Place all ingredients in a small bowl and blend together with an immersion blender till smooth. Add more vinegar or oil if it seems too thick.
  • Serve immediately or refrigerate.
